- 800gm fresh Asparagus, trim and cut into 4cm pieces
- 1/4 cup Pecans, toasted and chopped
- 1 bag Salad mix
- Combine all dressing ingredients and blend on high until smooth.
- Blanch or steam asparagus for 3 minutes and set aside.
- Place salad leaves on serving plate with asparagus and pecans. Top with dressing and enjoy.
