Paleo Asparagus Salad Recipe

Ingredients

For Dressing
  • 2 Tbsp onion, minced
  • 1 Tbsp Paleo mustard
  • 2 Free range organic Egg yolks
  • 1/4 cup fresh Dill, minced
  • 1/2 cup Extra virgin Avocado oil
  • 2 Tbsp White wine vinegar
  • Sea salt and black pepper
For Salad
  • 800gm fresh Asparagus, trim and cut into 4cm pieces
  • 1/4 cup Pecans, toasted and chopped
  • 1 bag Salad mix

Directions

For Dressing
  1. Combine all dressing ingredients and blend on high until smooth.
For Salad
  1. Blanch or steam asparagus for 3 minutes and set aside.
  2. Place salad leaves on serving plate with asparagus and pecans. Top with dressing and enjoy.
