Paleo Carrot and Cumin Dip Recipe

Ingredients

  • ½ cup Cashews, raw
  • 2 cups Carrot, steamed
  • 1 handful Parsley 
  • 2 cloves Garlic
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Lemon juice
  • ½ tbsp Coconut Balsamic vinegar
  • 2 tsp ground Cumin
  • 1 tsp ground Coriander seed
  • Salt and pepper to taste
  • Crackers to dip

Directions

  1. Place all ingredients into a food processor.
  2. Process until smooth, you may need to stop the food processor and scrape down the sides a few times.
  3. Taste and add more salt, pepper or lemon as desired for flavour.
  4. Serve with your favourite Paleo crackers.
