- ½ cup Cashews, raw
- 2 cups Carrot, steamed
- 1 handful Parsley
- 2 cloves Garlic
- 2 tbsp Extra virgin olive oil
- 2 tbsp Lemon juice
- ½ tbsp Coconut Balsamic vinegar
- 2 tsp ground Cumin
- 1 tsp ground Coriander seed
- Salt and pepper to taste
Crackers to dip
- Place all ingredients into a food processor.
- Process until smooth, you may need to stop the food processor and scrape down the sides a few times.
- Taste and add more salt, pepper or lemon as desired for flavour.
- Serve with your favourite Paleo crackers.
