
Ingredients
- 1 cup dried dates, soaked in 1 cup of boiling water (keep water as it is needed for the recipe)
- 2/3 cup of Coconut flour
- 1/4 cup of Coconut oil
- 1 tsp of Baking soda
- 2 tablespoons of ground Chia seeds
- 2 tsp Cinnamon
- Pinch of salt
Directions
- Preheat oven to 180C
- Line a flat baking tray with baking paper
- Blend down dates, chia seeds, coconut flour, cinnamon, salt & bicarb until dates are finely chopped
- Tip into a mixing bowl and quickly add boiling water and coconut oil
- Using a fork, combine into a dough
- Let mix sit to firm up for 10 minutes
- Roll into walnut size balls, place on baking tray, flatten (makes about 25)
- Bake for 25 minutes, cool & enjoy.
