- 1/2 cup Dates, pitted and soaked for 15 minutes
- 1/2 cup Hot water
- 1 and a 1/2 cups coconut milk (canned and I used light)
- 1/2 Tbsp Vanilla extract
- Add dates and hot water to blender or food processor and blend on high until smooth paste. Scrape down the sides of blender if necessary.
- Add coconut milk and vanilla extract, continue to process until well combined and smooth.
- Transfer to an airtight container and store in the fridge for up to a week.
