- 2 ripe bananas
- 1/3 cup of coconut flour
- 6 free range eggs
- ¼ cup of coconut milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
Makes about 11 pancakes
- Mash the bananas until smooth.
- Add the remaining ingredients and whisk together until well blended.
- Add grass-fed butter or coconut oil to a frying pan, heat over a medium heat.
- Scoop about ¼ cup of the pancake mix into the frying pan and cook for 1-2 minutes on each side.
