Combine the coconut flour, tapioca starch, eggs, seasoning & water.
Cut the fish fillets in half diagonally into the size pieces you prefer & gently pat with a paper towel.
Heat the olive oil in a frying pan over a medium heat.
Coat the fish fillets with the mixed batter & place into the hot oil. Cook for 4 minutes and gently flip to cook on the other side for 3-5 minutes until the fish is white and flaky. Try not to overcook.
Use a spatula to remove from the pan and place on a paper towel covered plate. Serve while still hot.
