Paleo Beef Soup Recipe (using beef bone broth)

  • 900g beef chuck roast, trimmed & cut into 2cm cubes
  • 2 tbsp extra virgin olive oil
  • 2 spring onion, chopped
  • 2.5 cups carrots, chopped
  • 1.5 cup celery, chopped
  • 1 cup pumpkin, cubed
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, chopped finely
  • 4 cups beef bone broth 
  • 1 tbsp dried Italian seasoning
  • 1 tsp paprika
  • 1 tsp coarse ground black pepper
  • 1 tsp salt


  1. Sprinkle the beef with the paprika, black pepper and salt.
  2. Warm the olive oil in a large pot over a medium high heat and add the beef. 
  3. Brown the beef then add the spring onion and garlic.Cook until translucent. 
  4. Add the beef bone broth, Italian seasoning, pumpkin, celery, carrots and mushrooms. Stir to combine, cover and bring to the boil.
  5. Once boiling, reduce the soup to a simmer for 40 minutes, or until vegetables are tender.
  6. Garnish with coriander if desired.
