Paleo Coconut Beef Mince Curry Recipe paleochoice


  • 1 tbsp coconut oil
  • 1 cup courgette, sliced
  • 4 cloves garlic, finely chopped
  • 1 medium onion, diced
  • 460g minced beef, grass-fed
  • 1/2 cup tomato paste
  • 1 can coconut milk (we like to use Ayam)
  • 1 tbsp curry powder
  • 3 tsp ground turmeric
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 1cm fresh ginger, finely grated
  • juice of 1/2 lime 
  • salt and pepper to taste 


  1. Heat the coconut oil in a large frying pan on medium-high.
  2. Add the onions, garlic and courgettes and stir to coat them in the oil
  3. Add the beef mince, break up with a wooden spoon and cook until browned through, then turn the heat down to medium.
  4. Stir in the tomato paste and add the grated ginger.
  5. Add all the spices and combine well.
  6. Stir in the coconut milk and lime juice and simmer for five minutes.
  7. Ready to serve.
