
Ingredients
- 1 tbsp coconut oil
- 1 cup courgette, sliced
- 4 cloves garlic, finely chopped
- 1 medium onion, diced
- 460g minced beef, grass-fed
- 1/2 cup tomato paste
- 1 can coconut milk (we like to use Ayam)
- 1 tbsp curry powder
- 3 tsp ground turmeric
- 1 tsp cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1cm fresh ginger, finely grated
- juice of 1/2 lime
- salt and pepper to taste
Directions
- Heat the coconut oil in a large frying pan on medium-high.
- Add the onions, garlic and courgettes and stir to coat them in the oil
- Add the beef mince, break up with a wooden spoon and cook until browned through, then turn the heat down to medium.
- Stir in the tomato paste and add the grated ginger.
- Add all the spices and combine well.
- Stir in the coconut milk and lime juice and simmer for five minutes.
- Ready to serve.
