 Paleo Lamb Koftas Recipe

Ingredients

  • 500g lamb mince
  • ½ red onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tbsp mint, finely chopped
  • 2 tbsp olive oil
  • 2 tbsp coriander, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp chilli flakes

Directions

  1. Place all the ingredients except the olive oil into a bowl, and mix together thoroughly. Season with salt and pepper to taste.
  2. Separate the mixture into six even portions. One by one place each portion onto a piece of cling film and roll up so that the mixture forms even sized sausage shapes. 
  3. Place the wrapped koftas into the fridge to set for 30 minutes. Then unwrap from the cling film and insert a skewer into each one.
  4. Heat the oil in a frying pan over a high heat.
  5. Place the koftas in the pan and brown on all sides. Reduce the heat to medium and continue to cook for 6-8 minutes or until the kofta is cooked through.
  6. Serve with a salad
