- 3/4 cup of lemon juice
- 3 tbsp grated lemon peel
- 3/4 cup of agave syrup
- 1/2 tsp stevia
- 1 cup water
- Cook and stir agave syrup , stevia and water in a small saucepan until mixture comes to the boil.
- Reduce heat and leave uncovered for 2 minutes.
- Remove from heat and cool to room temperature.
- Stir in lemon juice and lemon peel.
- Cover and freeze for approximately 4 hours.
- Remove from freezer and serve.
