  • 1 medium head cauliflower trimmed and cut into florets
  • cloves garlic
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • Freshly ground black pepper


  1. Boil a large pot of salted water, add the cauliflower and garlic and cook for about 10 minutes or until the cauliflower is tender. Drain, return back to the hot pan and let it stand for 2 to 3 minutes with the lid on.
  2. Transfer the cauliflower and garlic to a food processor, add the olive oil, salt and pepper and purée until smooth.
  3. Garnish with your fresh herb of choice and a drizzle of olive oil.
  4. Serve immediately
