Paleo Sandwich Bread Recipe


  1. Preheat oven to 180 degrees celsius.
  2. Line the bottom of a loaf pan with a strip of baking paper (not the sides).
  3. In a large bowl, beat the eggs, sweetener, coconut oil and vinegar until thoroughly mixed.
  4. In a separate bowl, combine the cashew or almond meal, ground chia or flax, coconut flour, baking soda and salt until well mixed.
  5. Mix the dry ingredients slowly into the wet ingredients making sure not to over stir.
  6. Pour into the lined loaf pan and bake for 35-40 minutes.
  7. Remove from oven and allow to cool in pan for 12 minutes.
  8. Remove from pan by pulling out the baking paper.
  9. Set the bread on a wire rack to cool completely for 15 minutes.

Slice and enjoy.

Store it in the fridge for a week or in the freezer for a few months.
