- 2 cups Pineapple, fresh and diced small
- 1/3 Red onion, finely diced
- 1 Red bell pepper, diced small
- 1/4 piece of Jalapeno, finely sliced
- 1/4 cup Coriander, fresh and chopped
- Juice from 1 Lime
- Sea salt to taste
- Mix all ingredients in a bowl.
- Refrigerate leftovers for up to 2 days.
