Raw Paleo Pad Thai Recipe

Ingredients

  • 4 Courgettes julienned (2 yellow, 2 green)
  • 4 Carrots, julienned
  • 1/2 Cabbage, sliced
  • 4 Spring onions, finely sliced
  • 10 Radishes, grated
  • 10 Brussel sprouts, grated
  • Lime juice
  • Olive oil

For the Mango Sauce

  • 1 Mango diced
  • 1/2 White onion, sliced
  • 1/2 Chili
  • 1 Lime, juiced

Directions

  1. For the Pad Thai, add the raw ingredients to a bowl and dress with plenty of lime juice and a splash of olive oil.
  2. For the Mango Sauce, add all ingredients to a blender and puree.

    Ready to serve!
