Paleo Salmon Cakes Recipe

Ingredients

  • 2 eggs
  • 2 x 180g cans salmon (wild if possible), liquid drained off
  • 2 tbsp coconut flour
  • 1/4 cup of cooked, mashed sweet potato or butternut
  • 1 tsp mustard
  • 1/4 cup spring onions, finely sliced
  • 2 tsp coconut aminos
  • Salt and black pepper
  • Fresh lemon to serve

Directions

  1. Preheat oven to 180 degrees celsius and line a baking tray with baking paper.
  2. Mix all ingredients (except lemon) with a fork in a bowl and form 6-7 patties on the baking tray.
  3. Bake patties until firm, about 30 minutes.
  4. Serve with a squeeze of lemon.
