Preheat oven to 180 degrees Celsius.Line baking sheet with parchment paper and set aside.
In a microwave safe dish, place dates and 1 tablespoon water. Microwave on high for 30 seconds. Remove and mash dates with fork. Microwave for another 30 seconds adding ½ tablespoon water and remove and mash again.
In a food processor, blend date mixture, unsweetened applesauce, almond butter, cinnamon, and vanilla extract until smooth.
In a small bowl combine almond flour, baking soda, and salt. Mix date mixture into the dry ingredients and stir to combine together. Add grated apple to bowl and stir until well incorporated into batter.
Scoop batter onto prepared baking sheet. Once all cookies are on sheet slightly press down on the tops with damp fingers. Sprinkle with additional cinnamon. Bake for 20 to 25 minutes or until golden and cooked through.
