1 large Sweet Potato sliced lengthways
1 tbs Avocado Oil
1/2 Lemon juiced
Handful Fresh Basil
1/4 cup Pumpkin seeds
2 tbsp Olive oil
Salt and Pepper
1 Tomato sliced
1 Spring onion sliced
1/4 Cabbage sliced
1 tbsp Pumpkin seeds
Use a toaster or sandwich grill/press.
Turn the grill on and drizzle with a little oil, place the sweet potato slices on the grill, close the lid and allow to cook for 10 minutes. Cook for a further 5 minutes if required.
Place all the pesto ingredients into a blender or food processor and whiz until smooth.
Top the toasted/grilled sweet potato with pesto, tomatoes, spring onion, cabbage and extra pumpkin seeds.
