Paleo Whole Roasted Cauliflower Recipe

Ingredients

  • 1 head Cauliflower (stem and leaves removed)
  • 2 tsp Turmeric
  • 1 Tbsp Cumin
  • 2 Tbsp Garlic powder
  • 2 Tbsp Chili powder
  • 1 Tbsp Lime juice, fresh
  • ¼ cup Coconut milk
  • 2 tsp Sea salt
  • ½ tsp Black pepper

Directions

  1. Preheat the oven to 200 degrees Celsius. Grease a small baking sheet with coconut oil.
  2. In a large mixing bowl, combine the coconut milk with the salt, pepper, spices, lime zest and juice.
  3. Holding the cauliflower by its base, dunk it into the bowl, using your hands to coat the entire head.
  4. Place the cauliflower on the prepared baking sheet. Transfer to the oven and roast 40 minutes, or until exterior is dry to the touch.
  5. Let the cauliflower cool slightly, then slice into wedges.
